Whole Wheat Pizza Crust

Adapted from the Joy of Cooking by the Bun

Here is the recipe – makes enough for about 2 12″ pizzas:

Mix up and let stand for about five minutes:
1 package active dry yeast
1 1/3 cups warm (105 to 115 degree) water

Add:
1 and 1/2 cups all purpose flour
2 to 2 1/4 cups whole wheat flour
2 tablespoons olive oil
1 tablespoons salt
1 tbls sugar

I used the kitchen aid stand mixer and had to add a couple drops of water – just enough to let it all form a ball.  If you are doing it by hand, mix/knead for about ten minutes until you get into a ball.  Put it a bowl with a little olive oil, turn to coat, then let rise for about 1 to 1.5 hours, covered with some plastic wrap in a warm place. Divide in half, shape into two disks, let it rest another 15-30 minutes covered.  Now you can stretch it out and make some pizza!
